My son wanted me to teach him cooking since I travel a lot, I decided to start blogging all of his favorite dishes. Okra is one of his most favorite dishes. I will be posting more dishes in the future.
Fried okra( Bhindi fry)
Ingredients
Fresh Okra – 1 pound
Onion -1 medium
Garlic -2 cloves
Tomato – 2 medium
Green chilly -1 or 2 depending on how spicy you want it to be
Red chilly powder – 1/4 tablespoon
Coriander powder-1 tablespoon
Cumin powder -1 tablespoon
Salt to taste
Olive oil
Mustard – 1/4 tablespoon
Fresh cilantro to garnish
Step -1
Wash okra thoroughly and allow to drain all water and air dry for a little bit.
Wipe the okra completely dry. Make sure there is no moisture at all, otherwise when u cut them you would see a lot of slime coming out of it.
Cut the okra as shown. You could take 2 okra at a time clipping of the head.
This is how it will look when you have cut all the okra
Take olive oil in a medium-sized pan, when oil is hot spread mustard in the pan. Take caution if oil is hot, the mustard will start to splatter as soon as it hits the oil in the pan.
Step 5
Once the mustard splatter’s added the cut okra and start sauteing them. It will take 15 mins to cook on a medium flame.
Caution: Do not close okra with a lid, keep the okra open in the pan and cook it. If u close the lid then okra will become very slimy.
Step 6
While okra is cooking, cut one onion, 2 cloves of garlic, one Serrano pepper, and 2 medium sizes tomatoes.
Take another pan with some olive oil, once oil is hot add chopped onion, garlic, green chilly and tomatoes.
Step 8
Once onion, garlic, green chilly and tomatoes are cooked well. U have to add 1 tsp of coriander powder, 1tsp of cumin powder, 1/4 tsp of red chilly powder and salt to taste. Add a very little bit of water in order to cook the masala ingredients added. After the above mixture is cooked, you can add it with the okra cooking in another pan. Mix well. Don’t add too much of water since it’s a dry item and not gravy.
When mixed well the finished product looks like shown in the picture. Garnish with cut cilantro.
You could enjoy with hot white rice or hot chappati’s ( Indian home made bread)
