Aloo Paratha (Potato Paratha)

Ingredients

potatoes 3 medium

Wheat flour – 3 cups

Salt required to taste

Oil

Turmeric powder – 1/4 teaspoon

Green chilies 3

ginger small pieces

Fresh cilantro handful

Water

Step-1

Take 3 cups of Wheat flour in a big bowl. Add required salt, 2 tablespoons of oil and mix well. Gradually add water and knead the dough until all dry flour is mixed well into a dough. Make sure to add water gradually, when you need the dough should be firm.

Step-2

Take 2 to 3 medium size potatoes and boil them in a microwave or on the stove. Whichever is convenient for you. Set the potato aside after cooking, and drain all water from it. Allow it to cool so you could peel the skin.

Step-3

Peel the potatoes and then add 1/4 teaspoon of turmeric powder, chop finely 2 to 3 green chilies, a small piece of ginger and fresh cilantro. Add required amount of salt. And mash the potatoes and mix them well. Take a little and taste it.

Step-4

After you mash and mix them well. Then roll them into small balls like shown in the picture below and set aside.

Step-5

Take the wheat dough you have made in step-1 and then make them into a ball much bigger than the potato filing which you have worked on step 4.

Step-6

Dust your working platform with some wheat flour and with a rolling pin flatten the Wheat dough ball. Then add the potato filling which you have made in Step 4, by flattening it with your palm.

Step-7

Then fold all the sides of the dough from step-6 and dust it with some flour.

Step-8

Using the rolling-pin flatten out the dough ball, as shown below. Make sure to thin all the sides of the Paratha, so it could cook well and crispy.

Step-9

Place a non-stick flat pan on the stove, when the pan is warm, you could add the dough you have made in step-8 to the pan. Take a spoon of oil and drizzle it around the cooking paratha, you might need to add oil on the other side of the par. Make sure to cook both sides of the paratha by flipping over until each side is cooked like the picture shown below.
