Mint Fried Rice

If you have a nut allergy, you can make this rice by eliminating all the nuts from this recipe.


Ingredients for Masala

Mint leaves bunch- 1

Clinatro leaves bunch -1

Black Jeera – 1 teaspoon

Bay leaves- 2 to 3

Cinnamon sticks- 2 to 3

Cardamom – 3

Cashew nuts-  10 to 20 pieces, how many ever you need( you can also make it without any nuts}. I just love nuts so you will see them in my recipes.


garlic cloves – 2 to 3

Green chilies – 3 to 4

Vegetables for the rice

Onion – 1 medium

Cauliflower- 1 cup cut

Green peas- 1/2 cup

Green beans- small portion cut

White Rice -1 cup cooked




In a blender add a bunch of mint leaves, cilantro leaves, Green chilies – 4, few cashews, 2 to 3 cloves of garlic and a little bit of water and blend them well. If you have a nut allergy you can avoid the nuts completely. Set the blended masala aside.



In a medium saucepan. Add some oil and then add Black Jeera 1 teaspoon, Then add cinnamon sticks, bay leaf, cardamom, cashews and toast them.


 To the saucepan above in step 2 add some chopped onions, split green and saute until onion is translucent.


Add all the chopped vegetables like shown in the picture. you could previously chop the vegetables and microwave cook them in advance or add it to the pan and saute them until the vegetable is soft. You could use whichever method you want. Just the microwave option is a little quicker.


 Then add the masala from step-1 into the pan in step -4 and add the required salt. Mix well and saute until extra liquid is reduced from the masala. Then add the pre-cooked White Rice. Mix well, add chopped cilantro to garnish and serve the Mint fried rice hot.
