Cooking Post 15- Coconut Rice

Coconut Rice


Cooked White Rice – 2 cups

Fresh Grated coconut – 1 1/2 cups
Or Frozen coconut

Split channa dhal – 1 tablespoon

Cashew split in half – 2 tablespoon

Dry Red chilly – 2

Mustard seeds – 1 teaspoon



Green curry leaves- handful


Take split channa dhal and Mustard seeds as shown in picture and set aside in a bowl

Set aside cashew halfs and Green curry leaves aside for use later.


Grate fresh coconut about 1 1/2 cups. Grating coconut in India is pretty easy. If you don't get to grate fresh coconut you could use frozen coconut like in the USA. If it's frozen coconut just make sure you thaw the amount of coconut you want to use.


Take a medium size pan and pour 2 tablespoons of oil and add mustard, split channa dhal and red chilly . Add cashew when the other ingredients are roasted.


Take 2 cups of cooked white Rice and set it aside to cool .


Once the ingredients in step 3 are ready you could add Green curry leaves and the grated coconut into the pan. Make sure the mixture is roasted a little bit and then add the necessary salt to the ingredients before you add rice. If you are using frozen coconut then you could defrost and then add it into the pan.


Add the cooked Rice into the above mixture in step 5 and mix well. Severe hot and enjoy.
