Pav Bhaji (Spicy Bread and Vegetables)

Ingredients

potato – 1 large and 1 medium

Onion – 1 large

green chilly – 4 or 1 jalapeno

Tomato – 1 large

Garlic -3

cilantro

pan bhaji masala

Coriander powder -1 tablespoon

Jeera powder- 1 tablespoon

Red chilly- 1/4 teaspoon

Turmeric powder- 1/2 teaspoon

Oil

Butter

Salt

Water

Potato rolls

Step-1

Take one large onion, 4 garlic , 1 jalapeno and chop them up. Take one large tomato and chop it up and keep it aside to use later.

Step-2

Take the potato’s and boil them or microwave the potatoe for about 5 to 8 mins until potato is soft and could be mashed.Once the potato is cooked set it aside to be cooled so you could peel the skin.

Step-3

Take a medium sauce pan and pour olive oil or any cooking oil you use, liberally and once the oil heats add the chopped onion, garlic and Jalapeno into the pan and saute them until golden brown.

Step-4

Take the cooled  potato and peel the skin and mash the potato’s throughly and set aside.

Step-5

When onion is browned add the tomato you have chopped up and cook them until it’s soft , then add all the masala like 1 tablespoon of coriander powder, Jeera powder , 1/2 teaspoon of turmeric powder, 1/4 teaspoon of red chilly powder, and mix well.

Step-6

Then add water to the mixture, pour about 1 cup of water and mix well. If you need more than one cup, then add water in small quantity. Add the Mumbai Pav Bhaji Masala mix 1 tablespoon and required salt to the mixture. Allow the contents to come to a boil. Add chopped coriander and 1/2 lemon juice to be squeezed into the mixture . After you add lemon juice do not allow the mixture to boil for too long. You could add a big piece of Butter , if you like on the top and allow it to melt.

Step-7

Take potato Rolls or you could use Regular Bread also.

Step-8

Open up the potato rolls add butter or oil on both sides and place them face down on the flat pan to toast.

Step-9

Once the bread is nice , warm and toasted add them to a plate and serve the Bhaji. If you like it even more spicy then you could have chopped up fresh onions and green chilly with salt and lime squeezed. Enjoy the Pav Bhaji hot hot on a cold or rainy day. It will fill you with warmth.
