Crispy Vegetable Fritters ( Baji’s)

Ingredients

Dipping Batter

Besan flour 2 cups

Rice flour 1 1/2 cups

Salt

Red chilly powder 1/2 teaspoon

Corn flour – 1 tablespoon

Vegetables

potato

Onion

Jalapeños

Paneer

Oil to deep fry

Step-1

In bowl add 2 cups of Besan flour, 1 1/2 cups of Rice flour, 1 tablespoon of Corn flour, 1/2 teaspoon of Red Chilly powder, required salt.

Step-2

Mix the ingredients well and add water and keep mixing the ingredients.Make sure to not pour too much water . Have a thick flowing consistency, so when you dip the vegetables the batter sticks to them.

 

Step-3

You can use any kind of vegetables to be cut into bit size and dip them in the batter and deep fry in oil. For my dish, I have taken jalapeno, Onions, potatoes, Paneer.

Step-4

Peel the Onions and cut them round in thin layers.

Step-5

You clean, peel potatoes and cut them into thin slices, you could use the slicer or shredder to get your thin pieces.

Step-6

You cut Paneer into small cubes and have them ready.

Step-7

Take a medium size pan and add oil and heat up oil. Make sure you don’t have water near you when working with the oil on the stove. When the oil is hot, start dipping the vegetables in the batter from step-2 and careful drop them in from a distance you won’t have the hot oil splashing out.

Step-8

When the fritters turn golden brown color take them out with a large spoon draning them on a thick layer of tissue to take out all the excess oil and enjoy them hot with Ketuchup.
