Vegetable sandwich

Ingredients

Filling

Potatoes

Carrots

cauliflower

Peas

Fresh Cilantro

red chilly powder- 1/4 teaspoon

Coriander powder- 1/2 tablespoon

Turmeric powder- 1/4 teaspoon

Garam masala – 1/4 teaspoon

salt as required

Olive oil as required

Cheese

Bread slices

Step-1

Clean, Peel and cut a medium size potato into small pieces like shown below.

Step-2

Clean, Peel and cut Carrots into small pieces like shown in the picture.

Step-3

Clean and Cut cauliflower into small pieces as shown in the picture.

Step-4

Take a medium saute pan and add 2 to 3 tablespoons of oil. Then add all the chopped vegetables from step 1 to 3 along with frozen peas. If you have fresh peas, you could use that also. Add 1/4 teaspoon of Turmeric powder and mix the vegetable and keeping the stove in medium flame, close the lid so vegetables could cook.

Step-5

In order to speed up the process from step 4, you could add all the cut vegetables from step 1 to 3 along with frozen peas in a microwave-safe bowl and cook the vegetables on a high for about 4 to 5 mins till all vegetables are cooked well. Then you could add the vegetables with little oil to cook in a pan. This helps to reduce the cooking time.

When all vegetables are cooked well, you can add 1/4 teaspoon of red chilli powder, 1/2 tablespoon of coriander powder, salt and mix the vegetable well. To add a little more flavor you could add 1/4 teaspoon of Garam masala powder and mix the vegetable well. Finally, add chopped fresh cilantro and mix well.

Step-6

Take a panini maker, put it to heat, then in a plate take 2 slices of whatever bread you like. I have used the regular white bread. With a spoon take the filing which you have cooked from Step- 5 and added it to the bread, add whatever cheese you like to spread it on top of the filing. Use the other bread as a cover and place it into the panini maker. Cook it and enjoy with a bowl of Tomato soup or any kind of soup for Lunch or dinner.

Enjoy the soup and Sandwich hot.

If you don’t take cheese, you could skip the cheese part and make the sandwich.
