Green Mango spicy Rice
Ingredients
White Rice -1 cup to be cooked
Green mango- 1 medium or 2 small
Green chilies-3 split
Ginger piece small
Dry roasted peanuts- 1/2 cup
Mustard seeds- 1 teaspoon
Dry Chana dhal – 1 teaspoon
Turmeric powder- 1/4 teaspoon
Red chilly powder if required – 1/4 teaspoon
Dry Red chilly long – 2
Salt
Olive oil to sauté
fresh cilantro chopped
Step-1
Take a medium raw mango and peel the skin thoroughly until you see the mango in white color. While working with mango, make sure to cook one cup of white rice and set it aside in a bowl to cool.
Step-2
Take a cheese grater and grate the mango until you get to the seed . Then dispose the seed of, otherwise it would be bitter. Split the green chilly and ginger.
Step-3
Take a medium sauce pan and add olive oil to sauté. Add mustard, Chana dhal, dry Red chilly and sauté, once the mustard splatter. Add the peanut to the pan and sauté until peanut change color and looked toasted and roasted.
Step-4
Add the shredded mango, green chilies and ginger into the pan. Add turmeric powder as mentioned in ingredients and some salt. Mix the ingredients well and allow the mango to cook until soft. You could put a lid on the pan and have the flame in medium. Taste to make sure salt and spice are correct.
Step-5
Take the rice from step 1 which you have cooked and set aside to cool. Add it to the pan of spicy mango mixture and now mix them well. Don’t press the rice down, make sure to fluff up the rice while mixing. Check for salt and add if required. Mix well.
Step-6
Mix the rice well and then add chopped cilantro and serve hot. You can eat it by itself or if you like some kind of chips. Enjoy.
