Baingan bharta- Grilled Spicy Eggplant


Big Eggplant-1

Onion – 1 medium

green chilies- 3

ginger- a small piece

Tomato- 2

Curry leaves- few

Turmeric powder- 1/2 teaspoon

Corriander powder- 1 tablespoon

Jeera powder- 1 tablespoon

Red chilly powder- 1/2 teaspoon

Garam Masala- 1/2 teaspoon




Chopped cilantro


Take one large Eggplant. With a knife, poke holes on all sides of the eggplant so the steam could escape when the eggplant is grilling over your stove. Make sure all sides of the eggplant are cooked well. The skin of the eggplant will start curling and ready to peel if the eggplant is cooked.

In order to cook the eggplant on your stove, poke a knife into the eggplant from one end, with the handle of the knife sticking out. So you could use that end as your grill stick to turn the eggplant on the stove so it…
